Description:
Udon (うどん or 饂飩) is a thick noodle made from wheat flour, used in Japanese cuisine. It is a comfort food for many Japanese people. There are a variety of ways it is prepared and served. Its simplest form is in a hot soup as kake udon with a mild broth called kakejiru made from dashi, soy sauce, and mirin. It is usually topped with thinly chopped scallions. Other common toppings include prawn tempura, kakiage (mixed tempura fritter), abura-age (sweet, deep-fried tofu pouches), kamaboko (sliced fish cake), and shichimi spice added to taste.
Soba (そば or 蕎麦, "buckwheat") is a thin Japanese noodle made from buckwheat. The noodles are served either chilled with a dipping sauce, or hot in a noodle soup. The variety Nagano soba includes wheat flour.
In Japan, soba noodles can be found in a variety of settings,[1] from "fast food" places to expensive specialty restaurants. Markets sell dried noodles[2] and men-tsuyu, or instant noodle broth, to make home preparation easy. There are a wide variety of dishes, both hot for winter and cold for summer, using these noodles.
Soba can nutritionally complement other grains like white rice and wheat flour. Thiamine, missing from white rice, is present in soba. Soba contains all nine essential amino acids, including lysine, which is lacking in wheat flour. The tradition of eating soba arose in the Edo period.
Cooking Direction:
Take proper portion noodles and pour into boiled water for three minutes.
Take noodles out and drain it by cool water
Pour noodles into a bowl for ready use
Mix bonito flake soup, sesame paste, mirin and soy sauce into a container and stir into thick paste.
Cut fresh cucumber, nori, egg cake into strips and sprinkle on noodles
Spread the ready paste and stir noodles to uniformity.
Tip: the noodles contains salt already; pls taste it before you put more salt
